A couple good bets are: 
Traveling nurse 
(you fill in for nurses on vacations all over the place)
Best part is agencies exist just to keep you employeed.  This career is not compatible with marriage or family, but it is convertable to a stay in one place career, and it also needs little education to start, but it has a lot of continual incremental upgrade potential through continuing education in specialty nursing fields.  You can even upgrade to public health or epidemiology (if you are not afraid of diseases!  lol)
Massage Therapist or personal fitness trainer
(you can get work anyplace, including cruise ships)
No agencies to keep you employed, but the education is short and the tips are good
Scientist or Science Technician
Not as much education required as you might think, and it is usually civil service.  Check out the USA jobs website and see how many of these positions there are.  You do not lose your seiority with the government as you move around either.
Import/Export Buyer
No agencies, lots of personal investment and some financial risk.  No education at all *required*, but extra languages are sure helpful, and so is someone to work for for awhile to learn your bit.  You can end up a millionaire on this one, and although a lot of people consider this exploitation of people in underdeveloped nations, others consider it helping remote or economically isolated peoples to market their little trinkets for *something*.  My own opinion of this activity depends on how you balance your priorities between being a millionaire with how much you can afford to invest in peoples&#039; trinkets.</description>
